Axis Deer
The Axis deer is a very popular trophy in the Texas Hill Country. Since their introduction from India in the 1930's the Axis has thrived in the combination of scrub oak and cedar cover, open fields, and abundant water which characterizes the Bar H Bar Ranch. We have some fine trophy candidates most characterized by the very long brow tines in our genetics, when combined with great length and above average mass of our mature Axis herd we are confident you will be very proud to have one in your collection.
Chef's thoughts
Axis and Whitetail are very similar and versatile. Even though very lean, most cuts are prepared to a rare or Med Rare to take advantage of the natural juices. Cooking any Deer too long may result in a dry cut.
